Julius Persoone, son of renowned chocolatier Dominique Persoone, has been Creative Director and Head of Production at The Chocolate Line since 2019. He combines scientific precision with gastronomic daring and is known for his fermentation techniques, natural colorings and even pralines designed for throat cancer patients. Julius is in high demand worldwide as a speaker and serves as an ambassador for Visit Flanders, giving lectures on the future of chocolate. Gault&Millau named him “Best Chocolatier of 2023.”
